
This image cracks me up! It epitomises how I feel many days, thinking about what to cook for dinner. Yes, I try to plan my meals for the week and buy according to whats on sale at the Giant, but inevitably there is a day or 2 that didn't go according to plan, or even if I know WHAT to cook, still DOING the cooking can feel overwhelming towards the end of a long day. If I had a wish, it would be for a personal chef!! The sad thing is I really do love to cook. A lot of family is coming to celebrate Christmas at our house, 2 different weekends and Ive been planning what to prepare for weeks... stockpiling up certain ingredients or things I know my brother-in-law likes or that the kids will enjoy eating. But, putting so much energy into 4 meals has sapped my reserves to be able to cook in the day-to-day for my own clan.
This year, Ive been able to avoid the "six o'clock scramble" but still cant quite muster up the enthusiasm for cooking for my family each night. Eating out isn't an option for us on a regular basis, and the daily training of our kids to be thankful for their food and NOT complain about it is also tiring. I keep telling myself, one day they will eat vegetables, one day they will request my lasagna and my BBQ chicken. But for now, its still such a challenge to cook something everyone will eat/enjoy. YIKES!
